Family and Consumer Science Courses

CULINARY ARTS I 1 Semester 1/2 Credit

Prerequisite: Freshman through Junior standing. Students may only take one culinary course per school year.

This course is designed to develop a basic understanding of food principles and knowledge. Included are nutrition, safety, sanitation, meal planning, table setting and service, food preparation, management techniques ,and the development of personal qualities needed for employment success. Through classroom experiences, a variety of culinary careers will be explored.

CULINARY ARTS II 1 Semester 1/2 Credit

Prerequisite: Sophomore through Senior standing and Culinary Arts I. Students may only take one culinary course per school year.

This culinary course is designed for students interested in advanced food techniques and gourmet cookery. The students receive laboratory experiences preparing food in quantity, and serving food. Safety and sanitation are emphasized. Students will prepare appetizers, soups, sauces, salads, sandwiches, pasta, meat, poultry, and ethnic foods.

BAKING AND PASTRY 1 Semester 1/2 Credit

Prerequisite: Sophomore through Senior standing and Culinary Arts I. Students may only take one culinary course per school year.

Students will explore the science of baking by practicing techniques essential to the production of a variety of breads, cakes, pies, pastries, candies, and desserts. Students will study cake decorating and apply basic techniques in plating and food preparation. Culinary professions and food industry occupations are reviewed.

WARRIOR CHEF 1 Year 1 Credit

Prerequisite: Junior/Senior standing with an application process and Culinary Arts I, Culinary Arts II AND Baking and Pastry

This course is designed to provide students interested in a career in food service with the information and practical experiences needed to be successful. Students who take this course are required to complete and pay for their Food and Handlers Certificate which will make them marketable in the job industry. Through classroom experiences, a variety of culinary careers will be explored. Opportunities for experiences in quantity food production and service are provided.

CHILD DEVELOPMENT 1 Semester 1/2 Credit

Prerequisite: None

This course emphasizes learning experiences which help students gain knowledge and understanding of the intellectual, physical, social, and emotional development of children from conception to adolescence. Students will study personality, decision-making, goal setting, family and interpersonal relationships, human reproduction, prenatal health and care of the newborn and toddlers. Childcare career opportunities will be explored.

PRESCHOOL LAB 1 Year 1 Credit

Prerequisite: Sophomore standing. Introduction to Child Care and Development, or consent of the instructor.

This course is designed to provide students interested in child and daycare occupations with experiences needed for career-related competencies. Students will be provided laboratory experiences in either a school-based or extended-campus facility. Classroom study is concerned with management of the preschool which is run by the students several days per week.

SEMINAR IN CHILD CARE 1 Year 1 Credit OR 1 Semester 1/2 Credit

Prerequisite: Senior standing and ECE certification required**

This course is designed and approved by the instructor for a limited number of senior students who wish to do advanced study in childcare. Areas of concentration will be chosen each semester. Work completed as a lab assistant may be part of the evaluation. Emphasis will be on attainment of maximum growth toward self-set goals, and may include off-campus activities. ** Students will have the option to take this course for 1/2 or 1 credit.

INDEPENDENT LIVING 1 Year 1 Credit

Prerequisite: Junior or Senior standing

This course offers a challenging learning opportunity for capable juniors and seniors to study and analyze current consumer topics such as loans, comparison shopping, budgeting, banking, credit, housing, automobiles, and insurance. Extensive use of current events will lead students through a year-long budget project to give them real life experience in living on their own. This course meets the requirements for Consumer Education instruction as required by the School Code of Illinois (Section 27-12.1). The blended format of Independent Living is an opportunity for students to complete their assignments and projects at their own pace. Struggling students will be identified to provide extra support and interventions to help them be successful in individualized learning. This course will give the opportunity to differentiate learning to meet the needs of all students enrolled.

TEACHING AS A PROFESSION (TAP) I 1 Semester 1/2 Credit

Prerequisite: Junior or Senior standing

This course provides the prospective teacher with a historical and philosophical overview of American public education. Topics include: What makes an effective teacher; the path to becoming a teacher; skills for college & career; and current society and education.

DUAL CREDIT TEACHING AS A PROFESSION II (TAP) / EDU 251 1 Semester 1/2 Credit

Prerequisite: Junior or Senior standing; successful completion of TAP I

A class introducing students to the field of teaching. Topics include current planning for instruction, instructional methods, technology for instruction, the role of assessment, classroom management, and the challenges of teaching. This course provides students with the opportunity to explore the field of teaching, reflect on their interest in education, and develop connections with other future educators. Students in this course will be observing in the elementary, middle and high school classrooms for a total of 15 hours. for college & career; and current society and education.

PRACTICUM IN EDUCATION 1 Semester 1/2 Credit

Prerequisite: Senior standing only. TAP I, or Teacher Assistant in Education and Technical Careers, or with strong teacher recommendation.

This is a one semester or one-year course that will seek to place students in real world practical experiences in education. The target population is senior students who have a legitimate interest to explore education as a career. Potential placements for interested and qualified students include elementary, middle schools, high schools, or preschools. Students will have a two period release and will need to maintain qualifications and produce a culminating project or portfolio. This is a two period experience.
